Pale straw yellow with greenish reflections, luminous and perfectly crystalline, with thin legs suggesting a moderate alcohol content.
Nose
Medium-high intensity, offering good complexity, articulated on mineral and saline notes, with a fine and distinctive character.
Palate
It opens with a fresh and dry attack characterized by a medium-light body. The wine plays on a balance based on a distinct savoriness and a lively acidity. Mineral traits emerge, along with a marked bitter almond note on the finish, for a medium-long persistent finish that leaves the palate clean and invites another sip.

Vinification
Grapes refrigerated immediately after harvest. This is followed by a gentle pressing after destemming and crushing. Subsequently, the intact free-run must flows into stainless steel tanks. Pre-fermentative static decantation preserves crystalline clarity and aromatic vibrancy.
Fermentation
Controlled fermentation at 15°C for 7 days with selected yeasts on clear must. The absence of malolactic fermentation enhances the mineral structure, the soul of the Passerina chietina.
Aging
One hundred and twenty days *sur lies* in stainless steel, with weekly *bâtonnage* to achieve a creamy texture. Minimal tangential filtration and 2 months of bottle aging refine the aromas and a pleasant lingering finish.
