Vinification
Following gentle destemming and crushing, soft pressing releases the rosé free-run must. Subsequently, the pre-fermentative cold maceration process at a temperature of 2-4°C for approximately 6 days, with daily bâtonnage, imparts to the rosé its characteristic fruity harmony.
Fermentation
Controlled temperature fermentation (15°) allows for a perfect aromatic metamorphosis. The cool embrace of stainless steel preserves the fruit tension and natural creaminess of the rosé.
Aging
A 3-month maturation in stainless steel tanks, where a quiet evolution occurs on fine lees. Finally, bottle stabilization enhances the balance between freshness and creaminess.
