Vinification
The hand-picked grapes are destemmed and crushed, followed by 20 days of maceration at a controlled temperature of 25-28°C, during which manual pump-overs are performed for gentle tannin extraction. Finally, soft pressing preserves purplish hues and tannic power.
Fermentation
Selected yeasts initiate fermentation at controlled temperature (25-28°C) for approximately 10 days. Complete malolactic fermentation in stainless steel transforms tension into silk, preserving the typical aromas of the wine.
Aging
After a brief natural decantation, the wine rests for 12 months in French oak tonneaux. Finally, 90 days of bottle aging enhances the harmony of the velvety tannin that embraces spices and sour cherry.
