Vinification
Upon arrival at the winery, the grapes undergo gentle destemming and crushing, followed by 10 days of maceration with a submerged cap, managed by manual pump-overs. Gentle pressing concludes the process, separating the wine from the skins without affecting the wine's typical aromas.
Fermentation
Slow fermentation at 25°C with selected yeasts for 10 days of aromatic metamorphosis. Complete malolactic fermentation in stainless steel tanks completes the cycle, preserving vegetal and red floral notes.
Aging
After a brief natural decantation, the wine rests in stainless steel tanks for 180 days on fine lees before bottling. Two months in bottle complete the aging.
