Vinification
Extended maceration of 30 days at controlled temperature, along with frequent manual pump-overs, extracts a deep ruby color from the cap. Finally, gentle pressing captures a rich extract, with notes of jam, pepper, and a velvety power.
Fermentation
Selected yeasts ferment the must at 25°C for approximately 10 days. Complete malolactic fermentation in stainless steel tanks prepares the structure for oak aging.
Aging
Large French oak barrels house the wine for 24 months. Finally, 12 months of bottle aging seals the symphony: silky tannin, significant alcohol, a layered and profound finish.
