Pale yellow color with a crystalline and limpid profile, with fine and light legs evoking a slender and lively style.
Nose
Olfactory profile of medium intensity, fresh and linear, enriched by light notes of yeast on a background of unripe white fruit, primarily green apple.
Palate
Fresh and crisp entry, medium-light body well-balanced between saline savoriness and sustained freshness. Green apple returns with a medium and refreshing persistence.

Vinification
The freshly harvested grapes undergo crushing and soft pressing in the pre-fermentative phase. The clear free-run must is fermented and is ready for the Charmat method.
Fermentation
Selected yeasts initiate fermentation of the must at 15°C for approximately 7 days in stainless steel tanks.
Aging
Two months of aging in stainless steel pre-Charmat, followed by 2 months sur lies in autoclave for secondary fermentation. The process concludes with 2 months in bottle post-sparkling wine production, which allows for the refinement of creaminess and medium-long persistence on the palate.
