Appearance
Bright straw yellow color, with a lively luminous appearance, and dense legs that reveal a structured and enveloping texture.
Nose
Aroma of great intensity and aromatic complexity, with ripe notes of mango and yellow peach, enhanced by an elegant balsamic touch.
Palate
Fresh and dry entry, well-balanced medium-full body, in perfect harmony between sustained acidity and juicy fruit. Yellow-fleshed fruit returns with hints of grapefruit on the finish, with medium and pleasant persistence.

Vinification
The grapes are immediately chilled, before being destemmed and pressed. This is followed by cold settling for about 10 days at a very low temperature, which imparts aromaticity to the wine.
Fermentation
Fermentation initiated at 20°C for two days, with a temperature reduction in a second phase until completion. Selected yeasts enhance the savoriness and the thiolic aromas typical of Pecorino.
Aging
Aging for 180 days in stainless steel tanks on fine lees imparts velvety complexity. Tangential filtration and 2 months of bottle rest create a savory-fruity balance and a pleasant finish.
